Crockpot Lasagna Soup

|2 teaspoons||olive oil|
|1 pound||mild Italian sausage|
|1||green bell pepper chopped|
|3 cloves||garlic minced|
|1 (32-ounce) container||chicken broth|
|1 (15-ounce) can||Italian stewed tomatoes, blended|
|1 (15-ounce) can||tomato sauce|
|1/4 teaspoon||crushed red pepper|
|4 ounces||whole wheat lasagna noodles, broken into small pieces|
|1 cup||shredded mozzarella cheese|
Heat the olive oil over medium heat in a large nonstick skillet. Add the Italian sausage, onion, green pepper, and garlic. Cook until the meat is browned and crumbled. Set aside.
Put the chicken broth, Italian stewed tomatoes, tomato sauce and spices in the crockpot and stir. Add the broken noodles and sausage mixture to the crockpot.
Cook on low for 3-4 hours until noodles are tender.
Serve each bowl with sprinkled mozzarella cheese on top.
