Bacon and Egg Sandwiches

Ingredients

5 hard-boiled eggs, chopped
4 slices bacon, cooked, crumbled
1 tablespoon sweet pickle relish (optional)
1/4 cup mayonnaise
salt and pepper to taste
lettuce leaves and tomato slices
8 slices white bread

Directions:

Mix eggs, bacon, relish, mayo, salt and pepper. Spread on 4 bread slices. Top with lettuce and tomatoes, then remaining bread slices.

Editor's Extra:
Use real bacon bits to make it easier. Some people like their bread toasted.
