Oysters Oregano

Ingredients

1/4 cup butter
1 large onion, chopped
1/2 teaspoon thyme
3/4 teaspoon oregano
3 cloves garlic, finely chopped
2 tablespoons chopped parsley
1/4 teaspoon red pepper
1 Salt and pepper to taste
4 dozen oysters with liquor
1 cup Italian-style bread crumbs
1/2 cup Parmesan cheese

Directions:

In a skillet melt the butter. Add the onion, and sauté until limp. Add all of the seasonings and mix well. Add the oysters and when the edges curl, add the oyster liquor. Fold in the bread crumbs. Transfer the mixture to a buttered casserole. Sprinkle the dish heavily with Parmesan cheese. Bake at 350° for 15–20 minutes.
