Mt. Elbrus: Bliny (Russian Pancakes) and Filling

Ingredients

3 eggs
2 tablespoons sugar
1/2 teaspoon salt
1 1/2 cups milk
1 cup flour (buckwheat is traditional)
1/2 teaspoon vanilla extract
2 tablespoons vegetable oil

BLINY FILLING:
1 package frozen berries
1/4 cup water
2 tablespoons cornstarch

Directions:

AT CAMP:
1. Beat eggs until foamy.

2. Add sugar, salt and milk.

3. Add flour and mix until there are no lumps; add vanilla.

4. Pour oil into pan; when hot, pour thin layer of mixture into pan.

5. Cook until edges turn light brown; flip to cook other side.

6. Serve with filling or fruit, butter, jam, sour cream.

FILLING:
1. Thaw berries; place into saucepan.

2. Dissolve cornstarch in water.

3. Cook on low heat until thickened.
