Carstensz Pyramid: Babi Ketjap

Ingredients

1 pound pork tenderloin
1 large onion
2 cloves garlic
3 tablespoons fresh ground ginger
1/4 cup brown sugar
1/2 cup Kecap Manis (sweet Indonesian soy sauce) or other soy sauce
2 cups water
2 tablespoons lemon juice
1 cube pork bouillon
salt and pepper to taste

Directions:

AT HOME:
1. Finely dice onion, garlic and ginger and place into separate sealable bags.

2. Cut pork into strips; place into sealable bag.

AT CAMP:
1. Add onion, garlic and ginger to fry pan.

2. Add pork and cook until onion is soft and pork is dark.

3. Add soy sauce, water, lemon juice and bouillon.

4. Simmer on low for approx. 30 minutes.

5. Serve with boiled or fried rice.
