Corny Cakes

Serves: 5
Total Calories: 211


1 package Jiffy corn muffin mix
1 egg
1 tablespoon melted shortening
3/4 cup milk
stick of butter or margarine


1. Add shortening to hot griddle.

2. Mix ingredients together; and spoon onto griddle.

3. Turn pancakes when bubbles appear.

4. Top with butter or margarine and favorite breakfast meat, syrup or other.

Option: Serve with bacon or sausage.

Fun Fact: Flour doesn’t have greater thickening power than cornstarch.
