Vanilla-Scented Bulgur with Dried Cherries and Toasted Walnuts

Ingredients

2 cups water
1/3 cup dried pitted red cherries
2 inch piece vanilla beans halved lengthwise
1 cup bulgur wheat
1/4 teaspoon sea salt
1/2 cup walnuts
2 cups plain yogurt

Directions:

1. Place the water, cherries, and vanilla bean in a 1-quart saucepan, and bring to a boil over medium heat.

2. Add the bulgur and salt, reduce the heat to low, and simmer 10 minutes or until the water is absorbed and the bulgur is tender. Remove the vanilla bean.

3. While the bulgur simmers, place the walnuts in a small unoiled skillet over medium-low heat. Stirring occasionally, dryroast the walnuts for 5 minutes, or until they darken and become fragrant.

4. Spoon the hot bulgur into bowls, top with yogurt and walnuts, and serve.

For a Change . . .
• Instead of vanilla bean, use 1 teaspoon vanilla extract. Stir it into the mixture once the bulgur is cooked.
