Berry Good Waffles

Yield: 4 Four Inch Waffles

Ingredients

2 eggs
2 cups whole wheat pastry flour
2 tablespoons baking powder
1 teaspoon sea salt
1 1/2 cups apple juice
1/3 cup canola oil
4 tablespoons vanilla extract
1 cup blueberries or thinly sliced strawberries
1 tablespoon honey (optional)

Directions:

1. Preheat the waffle iron.

2. In a large mixing bowl, beat or whisk the eggs until smooth. Stir in the flour, baking powder, salt, apple juice, oil, vanilla, berries, and honey (if using).

3. If the waffle iron does not have a nonstick surface, brush it with oil. Ladle enough batter to cover the bottom surface of the iron and cook until golden brown.

4. Serve hot with maple syrup, yogurt, or fruit sauce.

For a Change . . .
• For chocolate chip waffles, substitute 1 cup dark, milk, or white chocolate chips for the berries.
• For carob waffles, use 1 cup carob chips instead of berries.
• Substitute milk for the apple juice.

TIP . . .
Substituting juice for milk when preparing pancakes, waffles, and other breakfast cakes will offer sweeter pastries.
