Feta Cheese Salad


Serves: 4

Ingredients

4 cups green leaf lettuce torn into bite sized pieces
1 pint (about 2 cups) cherry tomatoes stems removed
2 1/2 cups seedless cucumbers slices, quarters, or half moons
1 cup coarsely chopped red bell pepper
1 cup coarsely chopped red radish
1/2 cup pitted kalamata olives
5-8 ounces feta cheese crumbled
1/4 cup extra virgin olive oil
4 teaspoons coarsely chopped fresh oregano or 2 teaspoons dried
1/2 teaspoon sea salt or to taste
1/2 cup coarsely chopped scallion or chives

Directions:

1. Place the lettuce, tomatoes, cucumbers, peppers, radishes, and olives in a large bowl. Toss gently.

2. Add the feta, oil, oregano, and salt. Mix well. Adjust the seasonings, if desired.

3. Garnish with scallions and serve.

For a Change . . .
• Replace the scallions with one or more edible flowers, such as borage, nasturtiums, calendula, day lilies, and bee balm.
• Use marjoram instead of oregano, or a combination of oregano and mint.
• Instead of red radishes, try radicchio, daikon radish, or cauliflower florets.

FYI . . .
In Greece, delicious feta cheese is made from a combination of goat and sheep milk. Feta from France is made with goat’s milk, and in the USA, you may be familiar with cow’s milk feta. All have slightly different sweet and salty flavors.
