Asian Cilantro Dressing

Yield: 2/3 Cup

Ingredients

1 tablespoon fresh ginger juice (* Squeeze about 2 tablespoons fresh grated ginger to produce this amount)
1/2 cup tightly packed fresh cilantro leaves
1/4 cup tamari sauce
3 tablespoons lime juice
1 tablespoon rice vinegar
1 tablespoon sesame oil

Directions:

1. Place all the ingredients in a food processor or blender. Blend until smooth, scraping down the sides of the bowl as necessary. Adjust the seasonings, if desired.

2. Use immediately. Refrigerate any leftovers.

For a Change . . .
• Instead of sesame oil, use peanut or toasted sesame oil.
