Tortilla Pizzas

Ingredients

brown rice or corn tortilla (or some brand of gluten free pizza crust)
pizza sauce (Trader Joe's makes a pretty good one)
finely sliced red onion or sweet onion
artichoke hearts quartered
roasted red chili pepper
thinly sliced mushrooms (shiitake, white, baby bella, etc)

Directions:

Preheat oven to 450 degrees. Spread pizza sauce on tortilla. Top with onions, artichoke hearts, peppers, and mushrooms. Cook 10 minutes. Serve.

Other topping options that work well together:
• Sun-dried tomatoes, asparagus, spinach, and roasted garlic.
• Arugula, dried figs, and nitrite-free prosciutto.
• Chopped romaine lettuce, chopped tomatoes, avocado, black olives (all added after you’ve heated the tortilla with the sauce for 10 minutes), and drizzled with a little vinaigrette.
