Lemon Tahini Dressing


Serves: 5

Yield: 1 1/4 Cups

Ingredients

1 clove garlic
1/2 cup sesame tahini
3 tablespoons lemon juice (about 1 lemon)
3/4 cup water
1/4 teaspoon salt
1/4 teaspoon cumin
cayenne or black pepper to taste

Directions:

Puree garlic in food processor. Add lemon juice and tahini. Blend. While still blending, begin pouring in water a little at a time. You may wish to add more or less to reach your desired consistency. Add salt and cumin. When completely blended, adjust salt and pepper to taste. Store refrigerated in an airtight container. It keeps for a couple of weeks. Serve over salads, steamed or grilled vegetables, chicken, rice, Falafel, or buckwheat noodles. This sauce is endlessly versatile.
