Saucy Meatball Subs

Ingredients

1 pound ground beef sirloin
1 onion, grated
dried parsley, dried oregano and dried basil to taste
salt and pepper to taste
3 slices bread
1 cup water
1 egg, beaten
1 cup all-purpose flour
oil for frying
4 sub buns, split

Sub Sauce:
1 (15-ounce) can tomato sauce
1 green pepper, thinly sliced
1 onion, thinly sliced
pepper to taste

Directions:

Saucy Meatball Subs:
In a large bowl, combine beef, onion and seasonings; set aside. In a separate bowl, soak bread with water; squeeze out excess water. Add moistened bread and egg to beef mixture; work mixture together with your hands. With floured hands, form into 12 meatballs. Roll meatballs in flour to coat. Add one inch of oil to a large heavy skillet; heat over medium-high heat until hot. Add meatballs, one at a time, keeping oil hot. Brown for about 7 to 10 minutes on both sides, until cooked through, allowing a crust to form. Stir meatballs into simmering Sub Sauce; heat through. To serve, place several meatballs with some pepper and onion on each bun; spoon any additional sauce on top.

Sub Sauce:
Place all ingredients in a large skillet or saucepan. Simmer over medium-low heat until vegetables are tender, stirring often.

Tip: Sweet potato fries are deliciously different! Slice sweet potatoes into strips or wedges, toss with olive oil and place on a baking sheet. Bake at 400 degrees for 20 to 30 minutes, until tender, turning once. Sprinkle with a little cinnamon-sugar, if you like.
