Pineapple Fried Rice

Ingredients

1/4 cup olive oil
2 teaspoons finely chopped garlic
16 medium shrimp (21 to 25 per pound) shelled and deveined
1 tablespoon roasted chili paste
4 cups Cooked White Rice
1 cup drained crushed fresh pineapple or canned-in-juice
3/4 cup sliced red onion
1/3 cup diced tomato
2 tablespoons tomato paste
2 tablespoons Thai fish sauce
1 teaspoon white pepper
1/4 cup diced scallion
4 sprigs cilantro (garnish)

Directions:

Heat olive oil in a large skillet over high heat. Add garlic and sauté until lightly browned, about 1 minute. Add shrimp and chili paste and stir fry for 1 ½ minutes. Add rice, pineapple, onions, diced tomatoes, tomato paste, fish sauce, and white pepper and cook, stirring constantly, 4 minutes. Transfer to a serving platter and sprinkle with scallions. Garnish with cilantro and serve.
