Soft & Chewy Pineapple Cookies

Ingredients

1 1/2 cups sugar
1/2 cup shortening
1/2 cup crushed pineapple
2 eggs, beaten
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups all-purpose flour

Directions:

Mix all ingredients well. Drop dough the size of an egg on ungreased baking sheets. Bake at 350 degrees for 12 to 14 minutes, or until tops are lightly golden.

Tip: Super-simple ice cream sandwiches! Place a scoop of softened ice cream on the flat bottom of one side of a cookie. Top with another cookie, bottom-side down; press gently. Serve immediately or wrap and freeze for up to one week.
