Whisk seasonings together in a small bowl to blend; rub mixture over ribs. Place ribs in a large heavy roasting pan. Bring beer to a boil over medium heat in a large saucepan; cook until reduced to one cup, about 5 minutes. Pour beer around ribs; cover tightly with aluminum foil. Bake at 400 degrees until fork-tender, about 1-1/2 hours. Combine remaining ingredients in a saucepan over medium heat. Simmer until slightly thickened, stirring occasionally, about 10 minutes. Brush ribs with barbecue sauce; grill on medium-hot coals for 3 minutes. Turn ribs; brush again with sauce and grill for an additional 3 to 4 minutes, until heated through. Bring remaining sauce to a boil; serve with ribs.
Tip: Using jute, bundle fresh herbs together such as thyme, sage or rosemary to create an herb basting brush...it really adds flavor to grilled foods.
