Tofu "Whipped Cream"

1 (12 1/2-ounce) box silken tofu
3 tablespoons canola oil
1/3 to 1/2 teaspoon powdered stevia extract (to taste)
1 1/2 tablespoons maple syrup or honey (optional)
3/4 teaspoon vanilla extract
1/8 teaspoon salt


• Combine all the ingredients in a blender or food processor, and blend until smooth and creamy.

VARIATIONS: Substitute citrus rind for the vanilla or add a few strawberries or other berries.
