Creamy Cranberry Sauce

Ingredients

1 (12-ounce) package cranberries (about 4 cups)
1 1/2 cups unsweetened apple juice
1/2 cup orange juice
3 to 4 tablespoons maple syrup or honey
3/4 to 1 teaspoons powdered stevia extract
finely grated rind of 1 orange

Directions:

• Pick out and discard any soft berries. If there are a lot of soft berries to be discarded, reduce the apple juice and sweeteners accordingly. Place the berries in a saucepan with the apple juice. Cook over medium heat for about 30 minutes until the berries are mostly broken down.
• Add the orange juice, maple syrup or honey, and stevia extract. Cook over low heat for about 30 more minutes, stirring occasionally.
• When the sauce is getting thick and creamy, remove it from the heat and put it through a fine-mesh strainer. Return it to the pan, add the finely grated orange rind, and cook for 20 to 30 minutes more on low, stirring occasionally.
• Cool on the counter then refrigerate. Cranberry sauce thickens upon cooling.

VARIATION: For a whole cranberry sauce, place the cranberries in the apple juice in a saucepan, and cook on medium for about 10 minutes until the skins burst. Mix in the stevia extract, maple syrup or honey, orange juice, and grated orange peel. Simmer about 5 to 10 minutes longer until the sauce starts to thicken. Cool on a counter then refrigerate.
