Fruit Juice Sauce


Serves: 4

Ingredients

1 cup fruit juice
1 1/2 tablespoons arrowroot powder or cornstarch
1/8 to 1/4 teaspoon powdered stevia extract
1 teaspoon lemon juice or 1/2 teaspoon vanilla extract (optional)
1 teaspoon honey (optional)

Directions:

• Whip the fruit juice and arrowroot powder or cornstarch together with the stevia extract in a small heavy-bottomed pan.
• Cook on medium heat until the sauce reaches a boil. Simmer for several minutes longer on low (5 minutes if using cornstarch).
• Remove from the heat. The sauce may be enhanced by adding a mixture of lemon juice and honey, or vanilla extract and honey, depending on the juice used. Try it and decide what tastes best. Serve warm over cake, custard, or tarts.

These juices work well: pineapple, pineapple/coconut blend, peach or pear puree, mango or papaya blends.
