• Grind the cashews and soymilk together in a blender until smooth. Keep the sides of the blender scraped down. Blend in the lemon juice, rind, stevia extract, and honey.
• Place the mixture in a small mixing bowl. Melt the butter or margarine in a small pan or in the microwave. Gradually beat in the melted butter with a hand mixer. Beat on high for about 3 minutes until thick and creamy.
