1 1/2 cups flour
1/2 cup whole wheat flour
1 1/2 tablespoons granulated sweetener
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons flax seed mixture (see glossary)
3 tablespoons canola oil
7 tablespoons soy yogurt
1/2 cup raisins

Preheat the oven to 375°F.

In a medium mixing bowl, combine the dry ingredients.

Mix the flax seed mixture and oil into the bowl of dry ingredients. Mix with a fork until well blended.

Add the soy yogurt and raisins, and mix until all the liquid is absorbed. Don’t over mix. Flatten the dough onto a lightly floured counter. With your hands, press the dough out into a ¹??-inch thick square or rectangle. With a blunt knife, cut into triangles and place on a cookie sheet. Bake for 13 minutes. These are best if served warm.
