Crackers

Yield: One 11 x 17-inch cookie sheet; 40 (2-inch) squares

Ingredients

2 cups unbleached flour
1/2 cup nutritional yeast
1 tablespoon sesame seeds
1 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon salt
2/3 cup water
3 tablespoons soy sauce
3 tablespoons canola oil

Directions:

Preheat the oven to 375°F.

Mix the flour, nutritional yeast, sesame seeds, garlic, chili powder, and salt in a mixing bowl.

Make a hole in the center of the dry ingredients, add the water, soy sauce, and oil, and stir well. You should have a stiff, but workable, dough. Add more water if the dough is too stiff. Press into a cookie sheet, working out from the center, until the dough is evenly covering the whole sheet. You can use a rolling pin to help in this process if you want. Pat down so the top is smooth, and cut into 2-inch square pieces. Poke a fork in the center of each cracker to prevent it from bubbling up. Bake for 15 minutes, or until golden brown. These crackers will be soft when warm but will get crispy as they cool down.
