1 tablespoon blackstrap molasses
2 tablespoons liquid sweetener
2 cups lukewarm water
1 package dry active yeast (1 1/2 tsp)
2 cups unbleached flour
1 tablespoon canola oil
1/3 cup barley flour
2 tablespoons soy flour
1 1/2 to 2 cup unbleached flour
1 1/2 cups whole wheat flour
1/2 teaspoon salt


Whisk the molasses, liquid sweetener, water, yeast, and flour in a mixing bowl, and let rise for 10 minutes to form a sponge.

Add the oil, flours, and salt to the rising sponge. Add more flour if the dough is too sticky to work with. Knead for 5-10 minutes until your dough is satiny and soft. Drizzle some oil over the bottom and sides of a bowl, and place the dough back into the bowl. Let rise for 45 minutes.

Divide into 20 walnut-sized balls. Roll out into ¹??-inch pencil-sized sticks. Place onto 2 cookie sheets with space in between each stick. Preheat the oven to 350°F. Let rise for 15 minutes, and bake for 15 minutes until golden brown.
