Savory Coconut Mint Lassi

Ingredients

1 (15-ounce) can coconut milk
1 cup diary or nondairy vanilla or plain yogurt
1/4 cup minced fresh mint leaves
1 cup ice
2 teaspoons honey or brown rice syrup (optional)
1/4 cup shredded coconut toasted slightly (for garnish)

Directions:

Place all the ingredients except the shredded coconut into the blender, and mix well. Serve in a tall, chilled glass, garnished with the coconut, and enjoy.
