Funky Monkey Smoothie


Serves: 2

Ingredients

2 cups rice or soy milk
2 ripe bananas
4 tablespoons raw or roasted cashew nuts
2 tablespoons raw or roasted cocoa or carob powder plus 2 tablespoons dehydrated sugar cane juice granules, honey, or maple syrup

Directions:

In an electric blender, blend all ingredients together until smooth and creamy. Serve garnished with a mint leaf and, perhaps, a dollop of dairy or dairyfree whipped cream. Enjoy!

VARIATIONS
Add a scoop or two of dairy-free frozen dessert.
Try other fruit (fresh or frozen) in place of the carob—strawberries, raspberries, peaches, etc.

*NOTE: It’s very simple to roast raw cashews. Just cook them in a dry, heavy skillet (cast-iron works well) over medium heat, stirring often, until golden brown. These taste better than store-bought, already-roasted cashews.
