1 1/2 pounds pork shoulder roast
1/4 pound pork liver (optional)
1 cup yellow cornmeal
1/4 cup finely chopped onion
1/8 teaspoon ground cloves
1/4 teaspoon ground thyme
1 teaspoon ground sage
1 teaspoon ground marjoram
2 teaspoons salt
freshly ground black pepper


Simmer meats in saucepan with 4 cups of water for 1 hour. Drain and save broth. Bone pork shoulder and chop shoulder and liver. Combine cornmeal, salt, 1 cup cold water, and 2 cups broth in saucepan. Cook, stirring until thickened. Add meat, onion, and spices. Cover and simmer for 1 hour. Pour scrabble into loaf pan (9 x 5 x 3). Chill for 4 hours. To serve, slice, dip in flour and fry.
