Cauliflower with Cheese and Olive Sauce

Ingredients

1 head cauliflower, medium
1/4 cup butter (1/2 stick)
1/4 cup flour
3/4 teaspoon salt
2 cups milk
1 cup shredded sharp American cheese (1/4 pound)
1/2 cup sliced stuffed green olives

Directions:

Remove outer leaves from cauliflower, wash in cold water and drain. Cook, head down, in boiling salted water until crispy tender, 20–25 minutes. Drain thoroughly. Meanwhile, melt butter in a saucepan over low heat, blend in flour and salt. Add milk, stirring constantly and cook until smooth and thickened. Add cheese and stir over low heat until melted. Fold in olive slices and pour over hot drained cauliflower.
