Filet Opalescence

Ingredients

1 pound beef sirloin steak, sliced 1-inch thick
1/4 cup dry sherry
2 tablespoons cornstarch
2 tablespoons peanut oil
1/2 cup thinly sliced mushrooms
1/2 cup snow pea, cut in 1/2-inch pieces
1 cup chicken bouillon
chow mein noodles
1 teaspoon soy sauce
1/8 teaspoon ground ginger
1/2 cup thinly sliced asparagus spears
1/2 cup finely chopped chives

Directions:

Cut beef into 2-inch strips and slice strips across grain about 1/8-inch thick. Combine sherry, soy sauce, cornstarch, and ginger. Marinate beef in this mixture for 1 hour. Fry in oil in large skillet on high heat for 5 minutes, stirring constantly. Remove beef and keep hot. Add vegetables and bouillon to liquid remaining in skillet and cook over high heat for 5 minutes, stirring constantly. Add beef to vegetables and cook for 5 minutes more, stirring constantly. Serve the filet opalescence with chow mein noodles.
