Crab Meat in Canape Shells

1/2 cup cooked crab meat
48 packages puff pastry shells
1 tablespoon butter
2 tablespoons flour
2 tablespoons grated Parmesan cheese
3/4 cup light cream
1 egg yolk
2 tablespoons dry sherry
1/2 teaspoon salt
freshly ground black pepper


Melt butter over low heat. Add flour and stir until smooth. Add cheese and cream and cook until thickened, stirring constantly. Remove from heat. Stir in crab meat, salt, and pepper. Beat egg yolk with sherry and add to crab meat mixture. Spoon into canapé shells and broil under medium heat for 3 minutes or until brown on top.
