Chocolate Soufflé: White House

Ingredients

2 ounces sweet baking chocolate cut into small pieces
1 1/2 cups milk
6 tablespoons sugar
6 egg yolk
6 tablespoons flour
2 tablespoons cornstarch
9 egg whites, stiffly beaten
butter
Vanilla Sauce recipe

Directions:

Bring chocolate, milk, and 6 tablespoons sugar to a boil, stirring constantly. Mix the egg yolks, flour, and cornstarch in a bowl. Add the boiling milk mixture gradually, stirring briskly. Return to the heat and bring to a boil, stirring constantly. Remove from heat and cool. Fold in the egg whites, then pour into a buttered and sugared soufflé dish. Bake in a hot oven (400°F) for 25 minutes. Serve with vanilla sauce.
