Chilled Cucumber Soup

Ingredients

2 1/2 cups chopped, pared seeded cucumbers
1 cup chicken broth
1 teaspoon salt
1 dash white pepper to taste
4 drops red hot pepper sauce
1 tablespoon lemon juice
1 cup sour cream
1/2 cup finely diced cucumber

Directions:

Combine the chopped cucumbers, chicken broth, salt, pepper, red pepper seasoning, and lemon juice in electric blender container and cover. Blend until smooth. Add sour cream to the mixture and blend well. Chill for several hours. Garnish each serving with finely diced cucumbers.

Author’s note: Soup looks much nicer and the presentation is much better if you leave the skin on the diced cucumbers.
