Put oil in skillet; add zucchini and onion, and brown lightly Remove from skillet and place in a shallow 1 1/2–2-quart baking dish.
Brown ground beef in same skillet. Drain fat. Stir in tomato sauce, garlic, salt, and cinnamon. Spoon mixture over zucchini and onion in baking dish. Blend egg and cottage cheese. Spoon over meat. Sprinkle Parmesan or feta over cottage cheese mixture. Sprinkle cinnamon and nutmeg over top. Bake at 350° for 30 minutes.
