Apple-Carrot Casserole

Ingredients

2 tablespoons flour
1/4 cup sugar
1 pound carrot, cut diagonally
1/2 teaspoon salt
1/2 cup water
4 medium cooking apples, peeled, cored, and cut into 1/2-inch slices
1/4 cup butter or margarine, thinly sliced, divided
1/4 cup frozen orange juice, mixed with 1/2 cup water

Directions:

Mix flour and sugar together in a small bowl. Set aside. Combine carrots, salt, and water in small saucepan. Cover and bring to a boil; reduce heat and simmer just until crisp-tender. Drain and set aside. Layer half of carrots, then half of apples in a lightly greased, shallow 2-quart baking dish. (I use a 10x6x2-inch Pyrex dish.) Sprinkle with half the flour mixture and dot with half the butter. Repeat layers. Drizzle with orange juice mixture. Bake at 350° for about 35 minutes or until apples are tender, gently pressing apples down into syrup midway of cooking.
