Combine broccoli, soup, water chestnuts, bamboo shoots, half the cheese, and half the onions in bowl; mix well. Add enough water for desired consistency. Spoon into 1 1/2-quart baking dish. Bake, covered, at 350° for 20 minutes. Sprinkle with remaining cheese and onions. Bake, uncovered, for 10 minutes longer. May substitute green beans for broccoli and cream of chicken or celery soup for mushroom soup.
