Sprinkle chicken with soy sauce and lemon juice. Add bean sprouts, celery, mayonnaise, onions, water chestnuts, salt, and pepper. Add the rice. Mix well.
Pour into a buttered 2-quart dish. Bake, uncovered, at 375° for 15–20 minutes. Sprinkle with noodles. Bake 5 minutes more.
