Mom’s Toasted Oatmeal Cookies

Ingredients

1 cup sugar
1/2 cup brown sugar
2 eggs
2 teaspoons vanilla extract
1/2 cup Crisco shortening (very important, do not substitute)
1/2 cup margarine
1 cup oatmeal, toasted in oven at 350° for 5 minutes
1 teaspoon baking soda
1 teaspoon salt
2 cups plus 4 tablespoons all purpose flour
1/2 cup chopped nuts
1 cup chocolate chips, raisins, or craisins (dried cranberries)

Directions:

Cream first 6 ingredients together. Stir in dry ingredients, nuts, and chocolate chips. Drop by teaspoon onto cookie sheet, and flatten with a glass dipped in sugar. Bake at 350° for 8 minutes.
