Ingredients

3 cups plus 2 tablespoons all-purpose flour, divided
1/2 teaspoon salt
1 cup butter-flavored shortening
1 egg
1/2 cup milk
4 or 5 large Granny Smith apples
1/2 cup raisins
1 1/2 cups sugar
1 teaspoon cinnamon
1/2 stick margarine, melted
1 egg white, beaten
1/2 cup powdered sugar
2 tablespoons water

Directions:

Preheat oven to 375°. Combine 3 cups flour and salt; cut in shortening. Separate egg, and save white for top. Beat yolk with milk, and add to flour mixture; mix well. Grease a 10x15-inch baking pan, and set aside. Divide dough into 2 pieces, and roll each to fit pan. Dough will be very thin.

Peel apples, and slice very thin; add raisins, sugar, cinnamon, melted margarine, and remaining 2 tablespoons flour; stir to mix well. Place first dough layer in pan, and top with apple filling. Cover with remaining layer of dough.

Brush top crust with beaten egg white, and bake 35–40 minutes, or until golden brown. Combine powdered sugar and water; drizzle over warm pastry. Best served warm or at room temperature.

Best to bake with an apple that holds its shape when cooked in a high-heat dish. The classic choice is the Granny Smith. Another choice is the Pink Lady, which is pear scented and delicious in an apple pie. Galas and Fujis have a medium firmness for muffins and cakes. The Golden Delicious is probably the most all-purpose apple.
