Ingredients

2 large leaves Romaine lettuce
1/4 cup Walnut Pâté or Pecan Pâté (recipes found in Dips, Pâtés, And Savory Sauces chapter)
1/4 cup Marinara Sauce (recipe found in Dips, Pâtés, And Savory Sauces chapter)
6 thin slices peeled cucumbers
6 thin slices onions
1/4 cup peeled and shredded carrot (optional)
1/2 Roma tomato, sliced

Directions:

Equipment:
measuring cups
rubber spatula
cutting board
peeler
chef’s knife, 8-inch
serrated knife, 5-inch
mandoline (optional, for thinly slicing cucumber and onion)
grater (optional)

Spread one of the lettuce leaves with the pâté, then the sauce. Arrange the cucumber, onion, optional carrot, and tomato over it. Put the second lettuce leaf on top. Serve immediately.
