Oven-Roasted Rosemary Potatoes

Ingredients

1 (1 1/2-pound) bag small pearl or red potato
2 tablespoons vegetable or olive oil
1 1/2 teaspoons minced garlic
2 tablespoons rosemary
1 teaspoon salt

Directions:

Preheat oven to 400 degrees.

Place potatoes and oil in a large zipper-lock plastic bag. In a small bowl, combine garlic, rosemary, and salt. Sprinkle over potatoes in bag. Close bag and shake until all the potatoes are evenly covered, then spread in a roasting pan. Cover with aluminum foil. Bake 15 minutes. Remove from oven and turn potatoes over. Bake an additional 10–15 minutes, or until done. Makes 6–8 servings.
