Cornbread Stuffing Potatoes

1 (24-ounce) bag frozen shredded hash brown potato
2 cups sour cream
1/2 cup butter or margarine, melted
1/4* cup dried minced onion
1 (10 1/2-ounce) can cream of chicken soup, condensed
1 cup grated Cheddar cheese
1 (6-ounce) bag seasoned corn bread stuffing mix


Preheat oven to 350 degrees.

In a large bowl, mix all ingredients except stuffing mix. Spread into a greased 9 x 13-inch pan. Sprinkle stuffing mix over top. Bake 35–40 minutes, or until heated through and bubbly around edges. Makes 8–10 servings.

* 1/2 cup chopped onion may be substituted.
