Beef and Scalloped Potatoes

Ingredients

5 to 6 large russet potatoes, sliced*
1 cup chopped onion, divided
2 teaspoons salt, divided
1 cup grated Swiss or Cheddar cheese
1 1/2 pounds ground beef
3/4 cup sour cream
1/2 cup crushed saltine crackers

Directions:

Preheat oven to 350 degrees.

Layer potatoes, 3/4 cup onion, 1 teaspoon salt, and cheese evenly in a greased 9 x 13-inch pan.

In a separate bowl, mix beef, sour cream, saltines, remaining onion, and 1 teaspoon salt. Place beef mixture over potato mixture. Bake covered with aluminum foil 30 minutes. Remove foil and bake an additional 20 minutes, or until meat and potatoes are done. Makes 8 servings.

*Approximately 21/2 pounds of potatoes.
