PB&J Bars

Ingredients

1 cup butter
1 1/2 cups sugar
2 1/2 cups peanut butter
2 large eggs
2 teaspoons vanilla extract
3 cups flour
1 teaspoon baking powder
2 teaspoons salt
2 cups raspberry jam or your choice of flavor

Directions:

Preheat oven to 350 degrees and grease a 9 x 13-inch pan.

With an electric mixer, beat the butter and sugar together in a large bowl for about 2 minutes. Add the peanut butter, eggs, and vanilla and beat 2 minutes more.

In a medium bowl, combine the flour, baking powder, and salt. Add to the peanut butter mixture in increments, using a low speed. Combine well.

Pour slightly more than half of the batter in prepared pan. Spread the jam over this mixture and spoon the remaining peanut butter batter on top of the jam.

Bake for 35–40 minutes. When cool, cut into bars.
