Oregon Crab Quiche

Ingredients

1 cup (4 ounces) shredded natural Swiss cheese
1 (9-inch) puff pastry shell, unbaked
1/2 pound Fresh Dungeness crabmeat, flaked, or 1 (7 1/2-ounce) can crabmeat, drained and flaked
2 fresh green onions (including tops), sliced
3 eggs, beaten
1 cup light cream or half-and-half
1/2 teaspoon salt
1/2 teaspoon grated lemon peel
1/4 teaspoon dry mustard
dash of mace
1/4 cup sliced almonds

Directions:

Sprinkle cheese evenly over bottom of pastry shell. Spread crabmeat over cheese; sprinkle green onions over crabmeat.

Combine beaten eggs, cream, and seasonings; pour over all. Sprinkle top with sliced almonds. Bake at 325° for about 45 minutes or until set (when knife blade inserted in center comes out clean). Remove from oven and let stand for 10 minutes before cutting and serving.


Fun Fact: The Yaquina Head Lighthouse is Oregon’s tallest lighthouse. The 93-foot tower is located on a narrow point of land jutting due west into the Pacific Ocean north of Newport, at Yaquina Head Outstanding Natural Area. Winds and rain have buffeted this lighthouse since its construction in 1873.
