Easy Elegant Truffles

Ingredients

2 (12-ounce) bags real chocolate chips (semisweet, milk, flavored or vanilla or combination)
1 (8-ounce) package cream cheese, room temperature
1/8 teaspoon salt
1 cup powdered sugar
1 tablespoon vanilla extract
semisweet or milk chocolate for dipping or almond bark in chocolate or white

Directions:

Melt chocolate chips in top of large double boiler over barely simmering water until melted. Add cream cheese and stir until it is melted in. Remove from heat; add salt, powdered sugar, and vanilla, and beat by hand or with mixer to blend and smooth. Cover and cool to about room temperature. Form into truffle-size balls; chill until firm. Dip into melted chocolate or almond bark coating to cover. Chill until firm.

Variations:
Mocha: Dissolve 3 tablespoons instant coffee in the vanilla before adding.

Orange: Add grated rind of large orange.

Black Forest: Add 1/2 teaspoon almond extract in place of vanilla and stir in 3 tablespoons very finely chopped, well drained maraschino cherries.

Coconut: Use vanilla chips. Use 1 teaspoon coconut flavoring with vanilla; stir in 4 tablespoons very finely chopped coconut.

Toasted Almond: Vanilla chips, 1/2 teaspoon almond extract, 2 tablespoons very finely chopped toasted sliced almonds.

German Chocolate: Use milk chocolate chips, add 2 tablespoons very finely chopped coconut and 2 tablespoons very finely chopped toasted pecans.

Mint: Use mint flavored chocolate chips or add 1 teaspoon mint extract.

Raspberry: Use raspberry chocolate chips and stir in 2 tablespoons seedless raspberry jam.
