Mom’s Minestrone

Ingredients

6 slices bacon
1 onion, chopped
1 cup celery, chopped
2 cloves garlic, minced
2 teaspoons fresh basil, chopped
1/2 teaspoon salt
2 (10 3/4-ounce) cans bean and bacon soup
2 (14 1/2-ounce) cans beef broth
2 pounds canned tomatoes
2 cups zucchini, peeled and chopped
2 cups cabbage, chopped
1 cup macaroni, uncooked
3 3/4 cups water

Directions:

In a large stockpot, brown bacon, onion, celery and garlic; drain. Add remaining ingredients. Stir well; bring to a boil. Cook, uncovered, for 15 to 20 minutes, until macaroni is tender.
