Jamaican Marinade for Chicken


Serves: 5

Ingredients

1/3 cup olive oil
3 tablespoons white vinegar
1 1/2 tablespoons lime juice
1 tablespoon sugar
1/4 cup green onion, minced
1 jalapeño, seeded and chopped
2 cloves garlic, minced
1 teaspoon dried thyme
3/4 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon salt
cayenne pepper to taste

Directions:

Combine all ingredients; mix well. To use, marinate chicken in refrigerator for 2 to 3 hours before grilling.

Tip: Bottled Italian salad dressing doubles as a quick meat marinade…adds juiciness and zingy flavor!
