Olive and Garbanzo Salad

Ingredients

DRESSING
1 tablespoon plus 1 teaspoon fresh lemon juice
1 tablespoon honey
2 teaspoons olive oil
2 teaspoons Dijon style mustard
2 cloves garlic crushed
SALAD
2 (15-ounce) cans garbanzo beans (chickpeas), rinsed and drained
1 cup pitted black olives
1/4 cup finely chopped fresh basil
3 tablespoons capers rinsed and drained
GARNISH
3 tablespoons grated Parmesan cheese
1 cup crouton

Directions:

1. Place all of the dressing ingredients in a food processor or blender, and pulse until well combined. Alternatively, place the ingredients in a small bowl, and whisk until well mixed.

2. Place all of the salad ingredients in a large bowl, and toss to combine. Drizzle on the dressing and toss to coat.

3. Divide the salad among 4 to 6 chilled salad bowls. Sprinkle a little Parmesan over each serving, top with a portion of the croutons, and serve immediately.
