Chinese Rice Salad

Ingredients

DRESSING
2 1/2 tablespoons olive oil
1 tablespoon soy sauce
1/4 teaspoon sugar
1/4 teaspoon ground ginger
1/8 teaspoon crushed garlic
SALAD
1 cup cooked rice chilled
1/3 cup halved olives of your choice
1/3 cup thinly sliced mushrooms
1/3 cup thinly sliced scallion
1/3 cup bean sprouts
1/4 cup chunks green bell pepper
1/4 cup chunks red bell pepper
GARNISH
1/3 cup cashew nuts pieces

Directions:

1. Place all of the salad ingredients in a large bowl, and toss to mix.

2. Place the oil in a small bowl, and whisk in the other dressing ingredients until well mixed.

3. Drizzle the dressing over the salad mixture and toss to combine. Sprinkle the cashews over all, and serve immediately.
