Spicy Southwestern Potato Salad

Ingredients

1 (4-ounce) can green chili, diced
1 hard cooked egg, finely chopped or mashed
1/4 cup dill pickle, chopped
1/4 cup onion, finely chopped
1 tablespoon prepared mustard
2 tablespoons mayonnaise
1 teaspoon prepared horseradish
1 teaspoon jalapeño sauce
1/2 cup diced cheese (optional)
5 Colorado potatoes, peeled, cubed, cooked

Directions:

In a mixing bowl, combine green chiles, chopped egg, dill pickle, onion, mustard, mayonnaise, horseradish, jalapeño sauce, and cheese, if desired. Mix well. Stir in potatoes; mix well. Cover and chill several hours.
