Peach Dessert Cake

Ingredients

1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar
1/2 cup shortening
1 teaspoon grated lemon rind
2 eggs, unbeaten
4 ripe peaches, peeled and sliced

Topping:
1/3 cup sugar
1/2 teaspoon cinnamon
1/4 cup chopped walnuts or pecans

Directions:

Sift flour, baking powder, and salt together. Beat 1/2 cup sugar and shortening until light. Add lemon rind, then eggs, one at a time, beating well. Add flour mixture in fourths, beating after each addition. Spread half the batter in a greased 8x8-inch baking pan. Top with peaches, then remaining batter.

Topping:
Combine sugar, cinnamon, and nuts; sprinkle over all. Bake 50 minutes at 350°. Cut into squares and top with whipped cream.
